Burdock (Arctium lappa) is a biennial herb grown for its taproot. Root is rich in inulin and antioxidants. Used in cuisine (stir-fry, soups) and medicine (detox, anti-inflammatory). Prefers loose soil, full sun. Harvest root in first year.
